Christmas break has officially begun! We’re on our way, driving through the night from Boulder to Chicago to have brunch with my bff before making our way to north eastern Michigan. Road trips are the best. A time to rock out to all our guilty pleasure road trip music, tell stories, relax in silence, admire Nebraska’s exquisite geography, and anticipate our final destination.
The roughest part about road trips is staying healthy – food wise. In the past when I’ve been on the road driving foreeeeeever and excited to just ‘get there’, I slip into eating McDonalds or KFC because it’s quicker. But I say nay! Not this time! I packed a mini cooler full of tasty treats to keep me away from the crappy fried stuff: dried fruit, rice cakes, veggie sandwiches, roasted peanuts, cheese and wheat thins, and juice. And since we’re driving through the night, I also packed a bottle of iced coffee. Probably some time around 2AM I’ll really want that. Mmm, coffee.
